This 6 Qt enamel Dutch oven is great for cooking, marinating, refrigeration and freezing. The color porcelain enamel on cast iron can be used on gas, electric, ceramic and induction cooktops, as well as in the oven. Not recommended for use on outdoor grills or over open outdoor flames. Induction Cooking Explained - Part 3 - Things to Consider Before Purchasing an Induction Cooktop

Part 1 of this series explained how Induction cooktops use magnetic hysteresis loss to directly heat the the pot or pan. Part 2 explained the growing popularity of induction cooking by exploring induction's many advantages over conventional cooking technologies. By this time, you are very likely thinking that induction cooking may be appropriate for your kitchen. However, before purchasing an induction cooktop, there are several things that you should consider. These issues are explained in this installment of the Induction Cooking Explained series.

Compatible Cookware Considerations

As explained in part 1, induction cooktops work only with cookware made from ferrous materials. Anyone with a significant investment in aluminum, glass, ceramic or non-magnetic stainless steel cookware will need to be aware that these types of cookware will not work on an induction cooktop and should include the cost purchasing new cookware when evaluating the cost of the induction cooktop. However, much of the most popular cookware used on conventional cooktops will work with induction cooktops, so many people will be able to use their existing cookware.

In addition, standard induction elements work only with flat-bottomed pots and pans and are therefore not suitable for use with traditional round-bottomed woks. However, it is possible to buy induction units specifically designed to work with woks, but these units are fairly uncommon in the United States. Furthermore, induction units designed to work with rounds-bottomed woks will work only with woks and will not work with flat-bottomed vessels.

Electric Power Considerations

Kitchens currently equipped with gas cooktops may not have an adequate electrical circuit available for the induction cooktop. As a rule, a drop-in induction cooktop with multiple burners will require a 220 volt, 40 amp dedicated circuit. Most conventional electric cooktops also require such a circuit, so those people upgrading to induction from conventional electric cooktops are unlikely to have an issue, but anyone upgrading from gas may need to have an electrician install a new electrical circuit for the cooktop. If so, this cost should be considered when evaluating the overall cost of the project. And, even if you are upgrading from conventional electric to induction, you should verify that the existing circuit is adequate for the induction cooktop that you have selected.

Note that cooks whose kitchens do not have a dedicated 40 amp circuit can still utilize induction cooking by purchasing a single element portable induction unit. Such units typically plug into a 110 volt household outlet and yet provide the power of the drop-in cooktops. Portable induction cooktops have the added advantage that they can be used for tabletop or table side cooking for dishes such as Chinese hot pot, fondue, or various desserts flambe.

Considerations for People with Electronic Medical Appliances

Lastly, anyone with a pacemaker or defibrillator should consult with his or her doctor before utilizing an induction cooktop, as the magnetic field generated by the cooktop could potentially interfere with such electronic devices.

This installment of the Induction Cooking Explained series examined issues that should be considered before purchasing an induction cooktop. Part 4 of the series expands on one of these issues by examining in detail the types of cookware that work best with induction cooktops.

Are Stainless Steel Pots and Pans Safe to Use?

We tend to be conscious of the food that we eat for health reasons but did we ever pay attention to the cookware used? Is your cookware safe? Or is it making your food unhealthy to consume? Iron is essential to our body which helps in producing red blood cells. Iron cookware elicits only 20% of the total daily iron intake needed hence, safe within the levels.

Minimal consumption of nickel is not poisonous but may provoke allergic reaction to some people. An adult consumes an average of 150 - 250 micrograms of nickel every day. Corrosion-resistant nickel when cooking will not add any significant amount to the diet.

Chromium intake in small amounts from 50 - 200 micrograms is considered safe. It takes only 45 micrograms of chromium when cooking, thus no harmful effects to consumers.

Therefore, always keep in mind that the type of cookware and the temperature you use to cook your food is vital which may either post a threat or provide healthy menus when cooking. Induction Cooking Explained Part 2 - Advantages of Induction Cooking

Induction cooking is very popular in Europe and Asia, and is rapidly gaining popularity in the Americas. As explained in part 1 of this series, induction cooktops use an alternating electromagnetic field to directly heat the the cooking vessel, yielding many advantages over traditional stovetop cooking techniques. This installment of the Induction Cooking Explained series will help you understand the growing popularity of this form of cooking by exploring some of these advantages.

Induction elements do not heat up; instead they heat the pot or pan directly. This is why they are more efficient than traditional gas or electric elements, and also why they release less waste heat into the kitchen. Also, because these elements do not get as hot as traditional elements, they are safer. In addition, these elements sense when a ferrous pot or pan has been placed on or removed from the cooking surface and automatically energize or de-energize accordingly. Finally, the obvious hazards of gas cooking (open flames, potential gas leaks and carbon monoxide emissions) are avoided.

One reason that many cooks prefer gas cooking over electric is that gas elements respond instantly to changes in temperature settings, whereas conventional electric elements take much longer to respond, due to the amount of time it takes for the element to heat up or cool down. Since induction elements heat the pan directly, they are just as responsive to temperature setting changes as are gas elements.

Finally, the flat, unbroken surface of an induction cooktop is easier to keep clean than are the irregular surfaces of conventional electric or gas cooking appliances. And, although flat surface ceramic electric elements also have flat, unbroken surfaces, these surfaces reach much higher temperatures, resulting in cooked-on spills and spatters that are very difficult to remove. Because induction surfaces remain relatively cool compared to conventional flat electric cooking surfaces, cooked-on spills and spatters are not an issue.

The numerous advantages of induction cooktops will make them the first choice for many home and commercial cooks. Why You Should Start Dutch Oven Cooking

I think it would be fair to say that anyone who considers themselves a "real" Chef owns or plans to own a dutch oven. Do you own a dutch oven yet?

What is a Dutch Oven?

OK before we get into the nitty gritty let's just look at what a dutch oven actually is. It's a pot, traditionally on 3 legs (modern versions have no legs to work on home ovens) that would be cooked over open flames, coal or buried in an underground oven. They are typically made of cast iron, sometimes ceramic lined but more modern ovens can also be made from aluminum.

So what's so special about them?

The idea with these ovens is that they sit on a hot heat and the material spreads the heat evenly throughout the pot giving equal heat to the food cooking away inside.... This is extremely good for cooking consistently and evenly throughout vegetables and meat.

What can I cook inside one?

Literally any kind of stew, curry, chili or soup is an ideal candidate for dutch oven cooking but it's also great for cooking cuts of meat, boiling potatoes and vegetables perfectly.

Stews can simply be made starting with onion, garlic and then boiling meat and vegetables are different times with some spices to add additional flavor. The even heat will do wonders. There are so many awesome recipes to follow on line. Curries and soups can be cooked in a very similar way. I personally favor curries over other recipes and start with a basic sauce then add ingredients depending on what is on hand.

Which type should I start with?

You could go straight after an antique to use on an open fire. These heavy pots may not be highly practical. Your parents or grandparents may have once laying around that needs a bit of cleaning up. However if you want convenience then consider a stove top option in ceramic lined or aluminium from a reliable company.
